Saint Clements Apricot Drizzle Cake

I’ve been in need of comfort food lately as I am losing my job at an animal sanctuary, rambling about vegan things is practically in the job description, and its bloody cold by the sea in England at this time of year. So basically every days been a stew day, but I thought hey it’s about time I baked a proper cake to have with some proper tea. No doilies and tea cosy’s though, I’m just gonna sit in bed in my lazy day clothes and watch x-files.

. So here it is-

Mix all this in one bowl:
2 cups plain flour
4 tablespoons gram flour
3 teaspoons baking powder
pinch o salt
1 cup of chopped dried apricots

Mix this in anouther:
1 cup sugar
1 cup soy milk
1/3 cup veg oil
1/3 cup st clements orange juice
zest of two st clements oranges
a bit of orange oil if you have it

then mix the wet into the dry, place in a 9x5inch loaf tin lined with greaseproof and bake in a preheated oven at 350f/180c for about an hour, about 15 mins before its done baking start making your “drizzle”

For the drizzle:
juice of two oranges
1/3 cup of packed dark brown sugar
Heat together gently in a saucepan, stirring continuoisly till the liquid has reduced into a nice syrup. When the cake is just out the oven pierce all over with a skewer and poor over the syrup. leave cake to cool in the pan, and tip out once cooled, slice and enjoy!
