1/2 tsp finley grated lime zest
a good squeeze of lime juice
2 cups of frozen corn
4 spring onions, sliced
Melt the marg in a saucepan on a medium heat and chuck in your chili, celerey, onion and potato and saute untill the celery is soft and the onion translucent, stir through the thyme and cook untill the onion is browned slightly.Stir in the flour, cooking for about a min-2mins, stirring as you cook, and add the mylk, zest and juice, bring to the boil for a few minutes then bring down to a simmer, once the potato is cooked add the sweetcorn and cook untill the sweetcorn is done, serve garnished with spring onions.
