sundried tomato and basil pasta stew

tomato and basil pasta stew

this is a bit of a cheap and cheerful stew recipe, may not be fancy but it does the job and fills a whole. great for using up veggies!

1 tbap olive oil
2 small waxy potatoes, diced
1 large carrot, peeled and cut into half moons
1 medium onion, cut into wedges
1 stalk celery, diced
1 tbsp sun dried paste

1/2 cup red lentils
3 cups of stock
1 tin of chopped tomatoes
1 tsp salt
1 tbsp garlic powder
1/2 fresh tomatoes, diced
1tbsp dried basil
1/2 tsp dried oregano

1 cup frozen green beans
1 cup conchigline pasta shells
red and black pepper to taste
Method:
preheat a large heavy bottomed pan with the olive oile in, add the onion,potatoes,carrot, celery and saute till onion and celery is translucent. Stir through tomato paste, add lentil through to oregano and bring to the boil for a few minutes then reduce to a simmer. cook for about ten minutes. bring stew back to the boil and add the thawed green beans and then the pasta shells, cook till pasta is tender, then serve.
