I made this for someone whos having there gall bladder removed and is on a low fat diet because of that, its simply and full of flavour, and who doesnt love quinoa?
Ingredients:
water to cover the bottom of your pan
1 large onion, halfed and sliced into thin half moons
1 tsp ground corriander seeds
1/2 tsp ground fennel
1/2 tsp ground cumin
1/4 tsp ground tumeric
1/4 ground ginger
pinch of ground cloves
1 1/2 tsp chilli powder
1/8 tsp salt
fresh black pepper
2 tins of chopped tomatoes
1 cup of stock
2 cups of cook quinoa
fresh chopped cilantro leaves for serving
Method:
heat water in a big pan and add the onion and a little salt, cook down in the water till translucent and add the spices. Give it a good stir and add the tomatoes and stock, salt and black pepper, cook through, then allow to cool and then part blend with an immersion blender, or transfer to a blender, part blend then return to saucepan and heat through. Serve over quinoa and top with chopped cilantro.
