First vegan foodie adventure – What was your first vegan foodie adventure?

When I first went vegan there was one dish I made about twice a week, lentil dhal, over the years the recipes changed but I can always rember making it for the first time and forcing everyone to eat it and my suprise when some people didnt even know what a lentil was?? lentil dhal is brilliant for new vegans, its cheap and it easy and boy is it tasty! the origional recipe i used to make comes from Peter Singers book animal liberation, but heres my version.

Ingredients:
1 tbsp vegetable oil
1 small onion, diced
pinch o salt
1 tsp cumin
1/2 tsp tumeric
1/2 tsp ginger
1/2 tsp fennel seeds
2 tsp hot curry powder
1/2 cup lentils, rinsed
2 bay leaves
1 tin of tomatoes
1 cup of stock
3/4 cup of coconut milk
2 tbsp flaked almonds for serving on top

Method:
Saute the onion in the oil until translucent, add the spices and give a good stir to coat the onions. Add the tomatoes, stock, bay leaves and lentils and bring to the boil, boil for a few minutes then reduce to a simmer. stir in coconut milk and cook until the lentils are tender and the liquid has reduced to leave you with a nice thick curry/stew. serve over rice or with naans and topped with the flaked almonds.

  1. Dhal is complete comfort food. I load mine up with caramelised onions, tonnes of garlic, as much pickled pink ginger as I can find and let it simmer away until it is unctious and headily fragrant and then I get to eat it for days in all sorts of ways :). I LOVE dhal. Cheers for the heads up on your favourite way of making it…I will try it soon 🙂
