Spicy peanut-sweet potato curry soup with onion bhaji fritters

lately all ive been thinking about is soups and stews, ive gone crazy for them! And who can blame me, when its so cold outside theres nothing better than to curl up with a nice warming soup or at least thats my excuse.

1tbsp peanut oil
1 onion finely diced
2 bell peppers diced
4 sweet potatoes diced, you can add other veggies such as squash/carrots etc
2 tsp balti curry powder
½ teaspoon chilli powder
1 tsp cumin
3 cups of stock
1 tin chopped tomatoes
1 cup of diced fresh cherry tomatoes, optional
1 cup coconut milk
½- ¾ cup of natural peanut butter

bhaji fritters:
1 cup gram flour
½ tsp bicarbonate of soda
pinch o salt
½  tsp cumin seeds
½ tsp curry powder
dash of cayenne
1 large onion finely diced
½ cup of water

Soup method:
fry the onion and bell peppers in the peanut oil till softened, add the sweet potatoes and stir through the spices till well mixed through. Add the stock, tinned tomatoes and diced fresh tomatoes if using, bring to the boil and simmer until veggies are nice and soft. Stir through the peanut butter whilst on a gently heating till combined the stir through the coconut milk and keep warm whilst you make the bhaji fritters.

bhaji fritters:
mix the ingredients together in turn going down the list and allow to sit for a few minutes whilst you heat your oil, use about enough oil to cover the bottom of a no stick pan 1cm up. Add the mix to the oil in table spoon amounts and fry in batches of four. Fry for three minutes on one side, flip then fry until crisp on the other side. The fritters should be nice and crisp on the outside, and nicely browned. Serve alongside your soup or with a curry or make them just as a treat!

This looks delicious, promises to pack a HUGE flavour punch and is home made, wholesome and something that I am instantly in the mind to make for our tea tonight.
