seitan saag



Ingredients:

peanut oil
1 large onion, roughly chopped
1 thumb sized piece of ginger, peeled and finely chopped
1/2 tsp salt
1 cup of shredded seitan, or a tin of mock duck, drained and sliced
1 tsp sugar
2 tsp of your favorite curry powder
1/2 tsp turmeric
1/2 tsp cumin
dash of cinnamon
1 heaped tsp of minced chili
1 tbsp tomato paste
1 cup of diced fresh tomatoes
1/2 cup of water
2 handfuls of spinach, roughly chopped

Method:
Saute the onion in the peanut oil with the ginger and salt till the onion is translucent, then add the seitan and and fry of till slightly browned. Add the sugar and the spices,chili and tomato paste, give a good stir and let everything brown a touch more, then add the tomatoes. Stir and cook the tomatoes for about 5 minutes, then stir in the water, bring the heat up and cook down by about half. Once its cooked down reduce the heat and add the spinach cooking through until it has wilted.
