Damn these are tasty! you can also deep fry these, but I chose to bake them.
Ingredients:
1/2 onion, diced
1tsp gram masala
1/2 tsp chilli powder
1/2 tsp ground corriander
1/4 tsp tumeric powder
1/8 tsp ginger
1/8 tsp cumin
1/8 tsp cinamon
pich o salt and a dash of black pepper
1 tsp sugar (optional)
2 peeled, cooked and mashed sweet potatoes
1/4 cup of frozen corn
1/4 cup of frozen peas
6-8 pieces of wholemeal bread, crusts sliced off
bowl of water
Method:
Preheat the oven to.Fry off the onion in a little oil until translucent, add the spices, salt and black pepper and stir through. Add the sweet potatoes and stir through. Add the frozen veg, stir through and heat through, take off the heat. Now to stuff the bread. grab a slice of bread and sprinkle it with water and press the bread slightly so it soaks through, the bread should just be damp enough to mould slightly, spoon a small amount of the sweet potato mix into the centre and mold bread around to create a ball, ensure fulling sealed and place on a greased baking tray, repeat until you have run out of ingredients and spray the bonda with oil/brush them with oil. There’s no real set time to bake these, it depends on the size and thickness of your bread, just be sure to check them and turn them every now and once they are nicely browned, enjoy with chutney/ketchup/hummus or anything you fancy!
Ohhh I’m a big fan of sweet potato and spices, too! These look and sound delicious!
i love sweet potatoes with everything! i think its a vegan thing? Like the moment your brain click onto “i need to go vegan” the love of sweet potatoes, kale and quinoa gets instaled.
What was the oven temperature?
Ooooh, I think it was 180c, this was so long ago- the cooking time depends on a few different things so just keep an eye on them.
