You know those times when you roasted too much asparagus? No? just me then? Well im sure these will work just as fine with out the asparagus, or maybe another veggie you just cant bring yourself to throw away and just need to use up. To roast asparagus toss in olive oil salt n black pepper and plonk in the oven for 15-20 mins at 200c/390f till tender.
Ingredients:
1 cup of self-raising flour
1/3 cup of nutritional yeast
pinch o salt
1/4 cup vegan margarine
1 cup of chopped roasted asparagus
enough soy milk to make into a dough
Method:
Preheat the oven to 220c/420f, and line a baking sheet with baking paper. Mix the dry ingredients together in a bowl and rub in the margarine. Stir through the asparagus, and add soy a tablespoon at a time and stir through untill a nice dough is formed. roll out into a 2 1/2″ cylinder. With a serrated knife slice into 1cm thick rounds and place on baking sheet. Bake for about 10 minutes until golden on top, transfer to a plate and eat warm, or allow to cool.
I’ve definitely bought too much asparagus! This is a nice solution. Pretty much I’ll eat anything if it’s in a scone/biscuit ;-).
same, nearly ate all of these! Not good seen as i made two batches of snickerdoodles yesterday and they are all gone as well, and too much asparagus? is there such a thing?
Nope, there is no such thing as too much asparagus…. What a lovely way to use up the leftovers!
