Char-grilled Red Pepper and Orzo Soup


Once again I am gonna be all British and talk about the weather, its cold! Very cold, there’s bits of snow and all sorts, oh and did I mention its cold? So I have gone running straight back to soups. 

Olive oil
3 red peppers
4 large/6 small tomatoes, diced
1 small onion, diced
2 cloves of garlic
1/4 cup tomato paste
2-3 cups of stock
1/2 tsp minced chili
1/2 tsp chili powder
1/3 cup of roughly chopped fresh basil leaves
1/2 cup orzo (rice shaped pasta)
Freshly ground black pepper to taste

Brush the peppers with olive oil and place under a medium-high heat grill, grill until slightly charred and blackened, whilst  they’re grilling, saute the onion in a little olive oil, add the garlic, cook for a few minutes, then add the tomatoes, chili, tomato paste and stock, cook until reduced slightly and the tomatoes have cooked down. Chopped up and add your peppers and take off the heat and allow to cool slightly, before either using an immersion blended or transferring to a blender. Blend until smooth, then return to the heat and add the chili powder, basil and orzo. Bring to the boil and cook for 5-6 minutes, or until the orzo is cooked, season with black pepper and serve.
