I think this here is a great meal for the vegan skeptic, its hearty and comforting, don’t judge me when I say I ate this for breakfast. I had a few things to do before going to a Christmas meal at a restaurant where I was assuming I would get served a plate of peas, but no they did good, no snickering from the waitresses, apart from some lady who kept trying to give me ice cream, it was a lovely meal. so i have to say I am well and truly stuffed!
Ingredients:
2 tsp olive oil
1 onion, thinly sliced
1 stalk celery, diced
1 1/2 cups shredded mixed peppers
2 cloves garlic, minced
1 tin of mock duck, diced/ 1 cup sietan, diced
3/4 cup vegetable broth
2 tbsp tomato paste
3 tbsp soy sauce
1/4 tsp sugar
2 tsp corn flour
3/4 tsp black pepper
pinch of ground ginger (optional)
Method:
Saute the onion, peppers and celery in the oil until the onion is translucent and the peppers softened. Add the garlic and saute for a few minutes more, then add the sietan, cooking until browned slightly. Take 2/4 cup of your vegetable broth , mix in the tomato paste, soy sauce and sugar and add to the pan. Then with your remaining broth whisk in the corn flour and add to the pan whilst stirring. Continue to cook whilst stirring until you have a nice thick sauce, then add the black pepper and ginger , give a gooooood stir and serve over rice.
Seriously need to get on the Seitan Train! I still haven’t had it commercially prepared and all my at home efforts aren’t that great… This looks delicious!

Thats the wonderful mock duck for ya! You can get it from health food shops and asian food marts, it really is amazing, its my got to for feeding meat lovers.
