A smokey and creamy satisfying vegan pasta dish. Pretty darn good for the person who misses bacon, you get the smokey, salty, umami flavors completely guilt free. This recipe makes a lot of sauce, for a lot of pasta, so feel free to half the recipe, or not if you have a big appetite like me.
Ingredients:
1/2 cup olive oil
1/2 cup plain flour
1/2 cup nutritional yeast
1/2 tsp garlic powder
2 tbsp smoked paprika
3 cups of kara coconut milk/ other vegan mylk alternatives
3 medium, cooked and mashed sweet potatoes
1 tbsp tamari
Black pepper
1/2 cup flaked almonds
1/2 tsp salt
1/4 tsp black pepper
1 tsp smoked paprika
a big pot of cooked pasta
more Smoked paprika
Method:
Heat the olive oil in a pan, on a medium heat and whisk in the flour, nutritional yeast, garlic powder and smoked paprika, whisk and keep on the heat for about a minute, take off the heat and add in half of the mylk and continue whisking, whisk in half the the well mashed sweet potato, do the same with the rest of the sweet potato and mylk. Place in a blender, or use and immersion blender and blend until smooth, return to the pan and whisk in the tamari and add black pepper to taste, add the cooked pasta to the pan and stir through. Toast the flaked almonds gently in a dry pan add in the smoked paprika slat and pepper and serve on top of the pasta, in bowls. Give a good, generous shake of smoked paprika on top of each serving of pasta.
