Okay so these are essentially pancakes, I just call em’ drop scones because I have fond childhood memories of little pancakes with dried fruit in them that my mamma used to make in the morning and they went by the name drop scones. They didn’t have oats in them, I just like how oats seem to keep my belly grumbles at bay for a lil’ while. Hope you enjoy these as much as I do!
Ingredients:
3/4 cup plain flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 cup oatmeal
1/2 cup of rolled oats
1/3 cup of chopped dried apricots
1 tsp mixed spice
1 tsp cinnamon
1/2 tsp ginger
1 banana, purred in a food processor, or just really, really well mashed by hand
1- 1 1/4 cups soy milk
1 tbsp molasses
2 tbsp light brown sugar
Method:
Mix the flour down to and including the ginger, working down the ingredients list, using a whisk. Mix until everything is nicely combined. Simply get another mixing bowl and mix the remaining ingredients, whisk together well, then add the wet into the dry and go crazy with the whisking until you get a nice thick batter. Heat a little vegetable oil in a frying pan and swirl it around a bit to coat the bottom of the pan, get an ice cream scoop or a 1/4 cup measure and scoop up some of the batter and drop it into the pan, fry until bubbles start to form on the top of the pancake and it is easy to flip, then flip! You can fry about two at a time, they should be golden brown on both sides. To keep them warm until serving pop on a plate under the grill on a low heat and cover the plate with foil.
They look so extremely tasty & well flavoured too!

Looks yummy, but how are you defining the difference between “oatmeal” and “rolled oats”? My oatmeal is labeled rolled oats.
Like big oats for the rolled oats and ground up for the oatmeal, hope that helps!
so when you say oatmeal, you mean I should grind some rolled oats into flour in the blender?
not right down to flour, still a little course, but yeah you could just pulse some rolled oats.
I think this is a language difference 🙂

My diet seems to consist of stews, pancakes, soup and baked goods. Im not sure if thats a bad thing……..

These look really good. I am actually going to try and make these as a raw recipe as it is almost there anyway. Enormous fan of a drop scone. Think I’ll do a potato one tonight, don’t know what it is like with you but it is freezing here 🙂
These look delicious. I love the idea of adding dried fruit to the batter. And tomorrow is Saturday.. aka. pancake day at my house! Although tomorrow will be drop scone day 😉
