This cake is lovely and moist, its kinda got the texture of a sponge pudding, it would be heaven served warm as a pudding with vegan custard, raspberry sauce and a few fresh raspberries (which is how I will most likely be eating it tonight). The cashews give it a bit of texture and a nice nutty flavor feel free to use macadamia nuts instead. Just to warn you, the mix for this cake is dangerously tasty so you are in serious danger of not having any mix left to put in the oven.
Ingredients:
3/4 cup apple sauce
1/2 cup canola/rapeseed oil
1/2 tsp vanilla extract
1/2 cup golden syrup
3/4 cup sugar
3 tbsp almond milk/soy milk
1 cup raspberries, well frozen
3/4 cup cashews
1 3/4 cup plain flour
1 tbsp corn flour
1 tsp baking powder
Method:
Preheat the oven to 200c/400f and line a 8 inch x 8 inch loose bottomed cake tin with baking paper, cutting an extra piece for the top of the cake. Combine all the wet ingredients in a mixing bowl and cream in the sugar. Very gently fold in the cashew nuts and raspberries, then sift in the dry ingredients and fold everything together gently until just combined. Spoon the thick batter into the lined cake pan After the first 20 minutes of baking you will want to cover the top of the cake with the extra square of baking parchment you cut for the top so the top doesn’t burn, bake for another 25 minutes until cooked through.
Wow, this looks amazing! I have been having such a bad luck with baking. I wonder if I could nail this one, with chance, hehe.

Hi, this looks amazing, do you make the apple sauce yourself? Just cook apples right?
I brought mine as im lazy, but I have baked goods with purred apples before, just dice the up and pop them in the food processor with a lil’ lemon juice. Hope that helps!
