I think most of us as vegans/ vegan curious peeps go through and ‘avocado on toast’ phase, and I think nothing beats using home-baked bread when having your avocado toasts, so I made this bread. The gram flour creates a nice tight crumb that’s ideal for toast, it also gives the bread a lot of flavour with out the need for yeast, so whether your an avocado on toast fanatic or plain and simple margarine fan this bread’s sure to brighten up your breakfast.
Ingredients:
2 1/2 cups plain white flour
1 3/4 cup gram flour
1 tbsp ground flax
2 tsp baking powder
1 tsp baking soda
1/2 tsp fine sea salt
1 3/4 cup water
1 tsp apple cider vinegar
Method:
Preheat the oven to 200c/400f and grease a 2lb loaf pan. Measure the plain flour, flax and gram flour out into a bowl, whisk in the baking powder, baking soda and salt. In a separate bowl combine the water and the cider vinegar, add the dry ingredients into the wet and mix until incorporated. gently knead for only 30 seconds, just to bring the dough together and shape it, pop it into the loaf pan and bake for about 40 minutes, of until well risen and sounds hollow when tapped on the bottom. Remove from loaf pan and leave on a wire rack to cool completely before slicing.
This looks great, how many days will it be good for to toast?
If you let it cool completly before slicing it then store it in an airtight container, probally up to three days.
Oh dear. I didn’t know avocado on toast was just supposed to be a phase!!! My phase has lasted about 5 years, in this case. Uh oh. 🙂

A deep bowl full of vegetably soupy goodness and as much of this gorgeous loaf as you can humanly handle…my idea of prospective winter delight. This recipe is going at the top of my list for this weekend…weekends being the prime time for rain around here 😉
