We had a rare day of glorious sunshine in England a few days ago, so I made this glorious rainbow salad to stuff into wraps and take on a nice long walk, but we ended up stuffing our faces and lounging about the house instead, but boy did we feel healthy whilst we did it! This is the kind of salad that makes your face feel like its glowing with health and gives you a real burst of energy, and if that’s not a good enough reason to make it, then make it ’cause it looks pretty!
2-3 cups kale that has been torn into bite sized pieces and had the tough stems removed
pinch o’ salt
1 handful of rocket/arugula (optional, I just had some in the fridge)
1/8 of a red or purple cabbage, shredded
1 red onion, finely sliced
1 big carrot, peeled and grated
1 big parsnip, peeled and grated
1 small raw beetroot, peeled and grated
1/4 cup extra virgin olive oil
2 tsp finely grated orange zest
the juice of one orange
2 tbsp lemon juice
1 red sweet pointed pepper, or sub 1 red bell pepper, cored and roughly chopped
1 clove garlic
2 tbsp red wine vinegar
a pinch red chili flakes (optional)
Place the torn up kale pieces into the bottom of a big salad bowl a massage with a pinch of salt until limp and a darker green colour that resembles cooked kale, now just build the salad on top of the kale. Plonk on the arugula and cabbage first then sprinkle the grated veggies on top like confetti. To make the dressing simply place all the ingredients into a food processor and pulse/blend until blended, toss through the salad and serve with humus and wraps!
