A nice simple recipe for you guys, something for the ol’ vegan lunch box. Made these last night with the intention of giving them to my boyfreind for his night shifts but just carnt seem to stop eating them…. I used to make thing like this when I was raw(ish) and for somereson forgot how good they are. You can roll the mix into a ball and coat with extra coconut and pop into petit four cases for a super cute gift with little effort, perfect for whipping up last minute! I just like to sit around and eat these all day and pretend to be healthy….
Ingredients:
1 cup fresh dates (or rehydrated and drained dried dates)
1/2 cup raisins
1/2 cup saltanas
1/2 cup mixed nuts
2 tbsp flaxseeds
2 tbsp raw cacao powder (can sub regular cocoa powder just wont be as intense)
1 cup dried coconut
Method:
Very simple, just pulse everything appart from the coconut in a food processor it starts to come together like a dough, transfer to a bowl and knead in the coconut with your hands until well combined. Line a 9″x9″ dish with greaseproof paper and press th mix evenly into the bottom. Dip your fingers in a little water and press down over the top to smooth out. leave to set for a little while then slice up and wrap the idividual slices in greasproof and store in an airtight container.Β

Haha seriously funny! It is so true that there are many ways to still make healthy junk food but it is awesome you recognize that this shouldn’t be some type of meal replacement. You humor and recipe are refreshing.
