Dark chocolate balsamic mousse with bitter sweet dark cherries.

I’m sure everyone is still enjoying the awesome Virtual Vegan potluck, but I just thought I’d share this awesome recipe I made for TeenVGN’s first magazine! TeenVGN is website, resource and hang out for young vegans and vegan curious peeps, ain’t that awesome? They’re about to start bringing out a mag and I am happy to say I this recipe will be in there! And you know whats great about this recipe? Its super easy, apart from melting a lil’ chocolate all you have to do is blend and give a quick whisk, in the words of Ina Garten- how easy is that?

Ingredients:
200g quality dark chocolate
1 package of silken tofu
4 tbsp maple syrup
3 tbsp cocoa powder
3 tbsp balsamic vinegar

thawed frozen bittersweet dark cherries to serve (or fresh berries)

Method:
Carefully melt the chocolate in a heat proof bowl over a pot of hot water and set aside whilst you blend the tofu, syrup, cocoa powder and balsamic in a food processor until smooth. Whisk in the melted chocolate and spoon into glasses  on top of cherries and top with extra cherries for garnish. Serve chilled.
