Homemade gingerbread waffle mix.

The lovely Ann from An Unrefined Vegan (she has a bundle of delicious waffle recipes on her page) sent me a waffle maker for my birthday and I’ve had waffles most days since I got it. So I thought why not make this obsession a little easier on my self, so I made a waffle mix one evening. Now a happy tum in the morning isn’t too much for my un-caffeinated brain. I might see what other waffle mixes I can create, then who knows maybe I will just live off waffles for the rest of my life?

gingerbread waffles

For the mix:
2 cups plain white flour
2 cups plain wholemeal flour
1/4 cup molasses sugar
1/4 cup unrefined golden caster sugar
2 1/2 tsp baking powder
2 tsp baking soda
1/2 tsp salt
4 tsp cinnamon
2 1/2 tsp ground ginger
1 tsp nutmeg
1/2 cup ground flaxseed

Mix together all the waffle mix ingredients in a bowl and whisk together to ensure everything if evenly incorporated. Transfer to a clean, dry airtight jar- or other container ready to use as needed.
Preheat the waffle iron and spray with cooking spray/ brush with oil. Use 1/2 cup almond milk and 1 tbsp rapeseed oil (+1/2 tsp vanilla if desired) to every cup of waffle mix and whisk together until combined. Ladle onto the waffle iron and cook until crisp on the outside. Serve with tinned pears and coconut cream.

  1. My daughters have a waffle iron but they don’t get up before lunch time so waffles weren’t on our menu while I was staying with them the past weekend :(. I was going to make Angela (of Canned Time’s) cornmeal waffles but these babies look scrummy. Cheers for sharing them. I might have to get up early and just eat gingerbread waffles all to myself! 😉
