Peanut butter swirl brownies.

Recently I planned to do a package swap with Alice from Smokin’ Tofu, we both kinda got distracted and ate a lot of the stuff we originally brought to send, but hey food is just too tasty…. Then I discovered you can send brownies in the mail! I like to bake for other people and usually only send cookies in the post, wich are nice and all (my favorite kind of baked goods) but whats better than opening up a package full of fudgey chocolate brownies. especially when they have cute little swirls of peanut butter! I pretty much gonna send everyone I know brownies now! I hope they are okay with that….

1 cup vegan margarine
1 1/2 cups dark chocolate chips
2 fax eggs (1 flax egg= 1 tbsp ground flax + 2 tbsp water, whisk and allow to thicken for a few minutes)
1 tbsp fresh ground coffee
2 tsp vanilla extract
1/2 cup unrefined golden caster sugar
1/2 cup soft dark brown sugar
1 cup plain white flour
2 tsp baking powder
pinch o’ salt
3/4 – 1 cup natural peanut butter

Grease and line a 13×9″ pan and preheat the oven to 180c/350f. Gently melt the chocolate and margarine together in a bowl over a sauce pan of gently simmering water, not letting the water touch the bottom of the bowl.Once fully melted, allow to cool a little so the mix is closer to room temperature. Fold in the flax eggs, coffee, vanilla and both the sugars. Fold in the flour, salt and baking powder. Scrap into the prepared pan and spread out nice and even. Dollop in the peanut butter using a teaspoon and swirl together using a skewer. Bake for 25-30 minutes until slighty underbaked, but firm. Allow to cool in the pan until completely cool before slicing.
