Lemon chai seed drizzle cake

There have been a lack of posts on here lately as I have just moved into a new place- a room in sheltered housing- and I had a lot of running about, filling out forms, etc, to do. Now that I am all settled in I decided to make a cake to make the place feel all homely, after all you haven’t fully moved in until you’ve baked something (that’s a real thing, like a legal thing, I didn’t just say that as an excuse….). My sister gave me some chai seeds, so I thought I could use the chai seeds in a lemon cake instead of the classic poppy seed lemon cake, and it worked a treat!

Ingredients:
2/3 cup plain vegan yogurt
1/2 cup almond milk
1/3 cup rapeseed oil
1 tsp vanilla extract
1 tsp lemon oil
3/4 cup unrefined golden caster sugar
the zest from 2 lemons

1 1/2 tbsp whole chai seeds
1 1/2 cups plain white flour
2 tsp baking powder
pinch o’ salt

Glaze:
6-8 tbsp icing sugar
the juice of 1 lemon

Method:
Preheat the oven to 180c/350f and grease a 2lb loaf pan. In a mixing bowl whisk the yogurt, almond milk, oil, vanilla, lemon oil, zest and sugar together until well combined. Add the cha seeds, then sift in the flour, baking powder and salt. Fold everything together until no dry parts remain. Carefully pour into the loaf pan and bake for 45-55 minutes until the loaf cake passes the skewer test.Once baked, prick the cake carefully all over with a skewer, or cocktail stick. Whisk the glaze ingredients together and pour slowly over the cake. Allow the cake to cool completely in the pan. Carefully remove from the pan and slice.

  1. It sounds lovely. I don’t bake cake myself, only bread, but your recipe may tempt me to try one day.
    I do hope your new home turns out to be wonderful for you and you find lots of lovely neighbours to share your baking with.

  2. Congrats on the move! Lemon is my 2nd favourite cake flavour (carrot comes first!) and though I’ve never used chia seeds in a cake I use them in so many other things- they’re wonderfully versatile.

    • followup…I made this for a housewarming party and it was a superhuge hit so I spread the word about your site. When are you going to publish a cookbook? VeganDad did it through lulu.com so maybe look into that…? Cheers!
