Super simple savoury vegan french toast!

There have been a few times lately where I spent my money a little too frivolously and ended up with nought much apart from bread, almond milk and a few other essentials, but I understand I may be rather privileged with my having almond milk, it means I can chuck together this simple french toast and call it breakfast, lunch and dinner. Well after checking my milk privilege…. There’s only a two things essential to this french toast working out perfect-o-mundo, and that’s super thick slices of bread and a good skillet.

3 super thick slices of bread
1 cup unsweetened almond milk
a generous pinch o’ sea salt and fresh ground black pepper
3 tbsp nutritional yeast
pinch o’ cumin

olive oil for frying

Things that make a difference:
A nice thin flexible metal spatula
a cast iron frying pan

Grab a shallow tray, big enough to lay your bread in flat, and just mix the almond milk, salt ‘n’ pepper, nutritional yeast and cumin together in a little jug. Pour the mix into the dish. Lay the bread slices into the dish and let them soak up the liquid a little, then flip.
Heat some oil in the pan and swirl it around. Fry until you develop a crust and the french toast starts to brown, then flip and allow to develop a nice crust on the other side, add more oil if needed. Place under a low grill to keep warm and cook the remaining slices.

  1. I will have to try this! My boyfriend always talks about loving french toast with salt and pepper when he was a kid…I’ve only had french toast a few times in my life (and only since becoming vegan…go figure!) but I’ve always associated it with berries and sweet things. I love savoury though, maybe I’ll surprise him with this one morning 🙂

  2. Sometimes you just NEED some comfort food and you can’t get more comforty than fried bread. Love it…cold enough to freeze the proverbials off a brass monkey so perfect for this little black vegan duck. Cheers for the share 🙂
