A tin of cheap baked beans is a legit item to have on an ingredients list, its nothing to feel ashamed of. This is a simple variation of a recipe I posted ages ago for my mums cheap basic potato goulash, here its made a lot simpler and padded out with baked beans. Optional add ins are sweet peppers, chillies, leftover veggie sausages, seitan, anything you want glued to your insides with this thick comforting stew. It’s not really a traditional Kartoffelgulasch but sure fills a hole.
Ingredients:
1 tbsp olive oil
1 onion, diced
a pinch of caraway seeds
2 tbsp smoked sweet paprika,or more, go crazy
1 tsp cumin
2 tbsp tomato puree
1 1/2 cups smooth skinned potatoes chopped into medium/ small chunks
1 tin of chopped tomatoes
1 tin baked beans
1/2 cup veg stock, or as needed
A generous amount of black pepper and a pinch o’ sea salt
Method:
Heat the oil in a pan and saute the onion until translucent, add the caraway seeds and toss in the oil for about a minute. Add the remaining ingredients apart from the tomato puree, using just enough stock to give the potatoes enough liquid to cook in, bring to a simmer and simmer until the potatoes are cooked, Then stir through the tomato puree and cook until nice and thick. Serve with rice or soft polenta or what ever the hell you want… also great with sauerkraut and vegan sour cream dolloped on top. Even better the next day.

Carbs on carbs but aren’t beans honorary protein? I figure that pushes this right into the realms of “Perfect balanced food”. 😉
I like ur thinking! I aint got no problems with carbs, they are my true love…. but a bit of protien every now and then does the world of good.
