Just a quick post off my phone because I couldn’t resist sharing this. I made a quick sticky toffee pudding for two (translation: all for me, I’m lonely) and it was really fucking good. I’m not gonna lie, it might give you diabetes if you eat it too much but you probably won’t regret it if you save this recipe for an ocasonal treat… I hope….
Serve with vegan cream to cut through the sweetness a little and remember to brush your teeth before bed for sure…
For the pudding.
Ingredients:
1/3 cup soft brown sugar
1/2 cup almond milk
1/3 cup chopped fresh dates
1/3 cup vegetable oil
1tsp apple cider vinegar
3/4tsp baking powder
1 cup flour
Method:
Just simple mix the ingredients together in the order they appear in the ingredients list and place the batter in a lined 8″x4″ baking tray and bake for 25 minutes in an oven preheated to 180c.
Now for the sauce:
Ingredients:
2 tbsp vegan Marg
4 tbsp vegan cream
2 tbsp soft brown sugar
Sauce method:
Chuck everything in a saucepan and bring to a medium heat, swill the pan to mix the ingredients together and let bubble for a minute, do not stir with a spoon, this will make the sugar crystalise. Pour half the sauce over the finished pudding cake and reserve the other half for serving.
